Air Fryer Onion Bhajis.

The perfect side dish to complement your Indian inspired feast on pages 10-13.

Ingredients • 2 large White Onions, finely sliced • ½ tsp Salt • 1 Green Chilli, seeds removed and finely sliced • 3 Garlic Cloves, crushed and diced • ½ tsp Turmeric • 1 tsp Garam Masala

• ¼ tsp Ground Ginger • 20g Fresh Coriander, roughly chopped • 70g Plain Flour • ½ tsp Baking Powder • 10ml Light Sunflower Oil Spray • 3 tbsp Mango Chutney, to serve

Method Place the onions and salt in a small bowl and set aside for 30 minutes.

In the meantime, in a large bowl, combine the spices, half the coriander, flour and baking powder with 75-80ml of water, whisking to form a thick batter. Now squeeze out any excess water from the onions with your hands and tip into the large bowl. Add the garlic, chilli and the rest of the coriander and mix well, coating all the onions with the batter. Pre-heat the air fryer to 190°C and line the tray with greaseproof paper. Using 2 dessert spoons, shape the mixture into 8 rounds on the tray (cook in 2 batches in a small air fryer). Spritz each bhaji with a little oil and cook for around 15 minutes, turning each bhaji and spritzing with oil halfway through. Serve with mango chutney and extra fresh coriander.
