WINTER WALDORF SALAD SERVES 4 | PREP 20 MINS

Ingredients Red Cabbage,

Dressing 1 tbsp Apple Cider Vinegar 1 tsp Dijon Mustard 2 tbsp Natural Yogurt 2 tbsp Extra Virgin Olive Oil

finely shredded with a knife or mandoline 2 Celery Sticks, finely sliced 2 Granny Smith Apples, cored and diced 30g Chopped Walnuts, lightly toasted in a dry frying pan 40g Dried Cranberries

Method Whisk together the dressing ingredients and mix through the salad ingredients, making sure all ingredients are coated with the dressing.

SPICY & STICKY ROASTED ROOTS SERVES 6 | PREP 10 MINS | COOK 45 MINS

Ingredients 750g Carrots 750g Parsnips 2 tbsp Honey

Method Pre-heat the oven to 220°C.

Make the glaze by mixing balsamic vinegar, honey, 2 tbsp olive oil, curry powder and chilli flakes. Remove the foil and add the glaze to the veggies. Toss well to combine. Return to the oven for 30 minutes, making sure to toss the veg regularly until sticky and golden.

Slice the carrots in half lengthways and do the same with the parsnips. Split between 2 baking trays in a single layer. Season generously with salt and pepper and add a big splash of water to each tray. Cover with foil and put in the oven for 15 minutes.
