ROASTING TEMPERATURE GUIDE.
• Baste regularly. It’s important to keep your turkey moist throughout the cooking process, so be sure to re-baste at regular intervals. • Be generous with seasoning and butter. For extra flavour and moisture, season well and rub butter under the skin of the turkey. • Add festive flavour. Finely chop some of the Christmas herb mix and blend this into the butter before rubbing under the skin.
