Don’t waste a bite of your delicious Christmas dinner with these great leftovers recipes, perfect for St. Stephen’s Day.

ALL IN ONE CHRISTMAS DINNER PIE

ST. STEPHEN’S DAY SPICED TURKEY SALAD WITH CLEMENTINE DRESSING

INGREDIENTS 1 clove of Garlic 1 medium Onion 100ml Chicken Stock 1 tbsp Flour 250ml Cream Leftover cooked Turkey, Ham or Veggies Mixed Herbs Mashed Potato

METHOD Sweat off the diced onion and chopped garlic. Stir in the flour and gently cook for 5 minutes. Add the chicken stock and the cream, and simmer for 5 minutes until the mixture thickens. Add the leftover turkey, ham and veggies, along with the mixed herbs, into the mixture. Transfer it all into a casserole dish. Add the mashed potato onto the top of the dish. If you’re using leftover mash, add 50ml of warm milk and a few tablespoons of cream to it. Add some grated cheese over the top of the potato and bake for 30 minutes at 180°C.

Any crunchy raw veg you have on hand (diced Cucumber, grated Carrot or Parsnip, finely shredded Brussels Sprouts, peeled and thinly sliced Celery, sliced Scallions) 1 tin of Cooked Pulses (Chickpeas are good, or Butter or Black Beans) Large handful of Toasted Nuts (Walnuts, Pine Nuts, flaked Almonds

(leftover or fresh) Grated Cheddar

or salted Peanuts) 1 tbsp Curry Powder Bag of Salad Leaves METHOD

SIMPLE WAYS FOR YOUR TURKEY TO TRIUMPH THIS CHRISTMAS CHRISTMAS CARVING TIPS: After cooking, let the turkey rest for 15-30 minutes before carving. Place a large roasting pan underneath your cutting board to catch the tasty juices, perfect for your gravy. Cut against the grain to ensure tender slices of turkey. TO GARNISH:

Gently heat some olive oil or butter in a pan, add the curry powder and let it sizzle for 30 seconds. Add the turkey and pulses and coat in the spiced butter/oil. Gently fry until the edges just start to crisp up. Assemble the salad leaves, raw veg and nuts in a large bowl, top with the turkey and pulses. Top with dried cranberries or pomegranate seeds. DRESSING Juice and zest of 1 Clementine 1 tbsp Apple Cider Vinegar (or White Wine Vinegar) 4 tbsp Natural Yogurt Small pieces of grated Ginger Mix the ingredients together and drizzle over the salad.

Use roasted garlic, fresh herbs such as rosemary, sage and thyme or fresh fruit like cranberries and oranges to serve up your showstopper.
