Sweet Mixed Peppers.

Ingredients

• 6 Sweet Peppers • 100g Hot & Spicy Cous Cous • 100g Lemon & Coriander Cous Cous

• 100g Roasted Veg Cous Cous • 200g Cocktail Vine Tomatoes • 1 Courgette

Method

Pre-heat the oven to 200°C/ Gas Mark 6. Cut the peppers in half, lengthways and remove seeds. Chop the courgette and tomatoes finely. Cook the 3 types of cous cous separately, as per pack instructions. Divide the courgettes and tomatoes equally between the cous cous. Place all the peppers on a baking tray, cover loosely with some tin foil and bake until the peppers are roasted al dente.
