Ingredients • 2 Red Peppers • 2 Yellow Peppers, cut into chunks • 1 Aubergine • 2 Courgettes • 8 Cherry Tomatoes
• 2 Red Onions, cut into wedges • 6 Cloves Garlic, unpeeled • 2 Sprigs Rosemary • 2 tbs Olives
• 2 tbsp Olive Oil • Salt and Pepper

Method Place all the vegetables except the olives and cherry tomatoes into a large bowl. Pour in the olive oil, rosemary, garlic and seasoning and toss to evenly coat with oil. Place the prepared vegetables in the roasting tray with the lamb or in a separate tray. Cook for 30 minutes before adding in the olives and cherry tomatoes, then cook for another 10 minutes.
