always nervous of cooking it. Here are a few simple tips. • Leave the skin on, this is full of flavour • Pat the fish dry before cooking • Season the flesh, not the skin (this helps with the sear after) • Don’t overcook it, it is quite delicate. “I just love vegetables. I think that we are blessed with the produce that we have on our doorstep. Vegetables are incredibly healthy and when treated with some creativity and love you can transform a vegetable into a dish with some simple ingredients!

In college we were trained that if it grew under the ground then you would cook it in cold water from the start, but if it grew above the ground or was green and leafy you would cook it in water that is already salted and boiling rapidly! I find cooking green vegetables the easiest. My top tips on cooking green vegetables are: 1. Put on a pot of water and bring it to a rapid rolling boil 2. Add some salt to the water – this will help lock in the vibrant green colour of your vegetables 3. Add in your vegetables (broccoli, mangetout, green beans, peas – whatever vegetables you have) and you will see that the water stops boiling. Once it comes up to a rapid boil, remove your vegetables and plunge them into ice cold water as this stops the cooking process and again helps you keep the green colour Below is my favourite tenderstem broccoli recipe that you can serve with your lovely Easter lamb roast.”

Method Pre-heat the oven to 180°C/Gas Mark 4. Cut the hot cross buns inhalf and spread themwith the butter, then close themup again. Put into an oblong baking dish, approximately 40 x 20cm. Whisk the egg yolks and caster sugar together until themixture turns pale and thickens. Put the cream into a small saucepan and gently bring to the boil, stirring as you do. Make sure that the creamdoesn’t burn on the bottomof the pan. Pour the boiling creamover the egg yolkmixture andwhiskwell. Add the vanilla essence andwhisk somemore. For the icing
Method Pre-heat the oven to 190°C/Gas Mark 5. Grease and line the cake tins. Mix the butter and sugar until light and fluffy. Add the eggs, one at a time, until smooth. Fold through the flour, baking powder, salt andmilk. Split themixture between 2 bowls. Add raspberries and pink food colouring to one. Add lemon juice and zest to the other. Spoon eachmixture into a separate tin. Bake for 30-40minutes, then cool for 10minutes. Turn out of the tins and leave to cool completely.
